Recipe Squished Potatoes

Ingredients

800 g Goldeneye Potatoes from Þykkvabæjar

8 tbs Olive oil

1 tsp salt

2 tsp fresh thyme

½ tsp black pepper

Process

  1. Boil potatoes until soft (ca. 15min)
  2. Add 4 tbsp olive oil on baking tray and spread
  3. Put potatoes on tray, space well
  4. Squish the potatoes into large rough cakes
  5. Spread rest of olive oil on potatoes.
  6. Spread the sea salt and thyme, pepper to taste
  7. Oven bake potatoes at 200C for 20-25 minutes
