Ingredients
800 g Goldeneye Potatoes from Þykkvabæjar
8 tbs Olive oil
1 tsp salt
2 tsp fresh thyme
½ tsp black pepper
Process
- Boil potatoes until soft (ca. 15min)
- Add 4 tbsp olive oil on baking tray and spread
- Put potatoes on tray, space well
- Squish the potatoes into large rough cakes
- Spread rest of olive oil on potatoes.
- Spread the sea salt and thyme, pepper to taste
- Oven bake potatoes at 200C for 20-25 minutes
