1 kg preboiled express potatoes from Þykkvabæjar
1 red onion
1 box green pesto from Sóma
Process
- Empty the bag of express potatoes and sift the water off
- Rinse the potatoes with cold water and split in half
- Cube the red onion
- Mix onion and potatoes
- Mix in the pesto
- Enjoy
